Easy Instant Pot Black Beans With Bacon

No soak black beans recipe. With minimal effort, 8 ingredients, and pressure cooker, this healthy and filling dish can be ready in under 60 minutes. Flavorful, creamy but not mushy with great texture.
Ingredients
  • 1 pound dried black beans
  • 3 strips of bacon, cut into halves
  • 1 small onion, cut in half
  • 6 garlic cloves, crushed
  • 1 orange, cut in half
  • 2 bay leaves
  • 2 quarts low-sodium chicken stock
  • 2 teaspoons kosher salt, more for seasoning
Instructions
  1. Press Sauté button
  2. Add bacon into the pot and sauté for about 2 minutes. This will crisp up the bacon and release its fat
  3. Add dried black beans, onion, garlic cloves, orange, bay leaves, chicken stock, and kosher salt
  4. Close the lid and cook at high pressure for 40 minutes + 15 minutes Natural Release
  5. Remove lid, discard onion, orange, and bay leaves
  6. Season to taste with salt, then serve!
Notes
No need to soak the black beans if it is cooked using a pressure cooker.

Too add flavor and texture, we served the black beans with orange slices, green onions, and orange zest.
