Ingredients
  • 1 pound flank steak, thinly sliced against the grain
  • 1 head broccoli, chopped into large florets
  • 1 tablespoon corn starch
  • 1 tablespoon salt
  • 2 tablespoons peanut oil or vegetable oil, divided
  • 1 tablespoon ginger, minced
  • 3 cloves garlic, minced
  • 1 tablespoon Shaoxing wine (Chinese rice wine)
Stir Fry Sauce:
  • 1 tablespoon [easyazon_link identifier="B001FB6BA6" locale="US" tag="nomrec-20" localize="y"]light soy sauce[/easyazon_link]
  • 1 tablespoon [easyazon_link identifier="B0001EJ4CU" locale="US" tag="nomrec-20" localize="y"]dark soy sauce[/easyazon_link]
  • 5 tablespoons water
  • 1 tablespoon peanut oil or vegetable oil
  • ½ tablespoon [easyazon_link identifier="B0001DMTJG" locale="US" tag="nomrec-20" localize="y"]oyster sauce[/easyazon_link]
  • 1 teaspoon Shaoxing wine (Chinese rice wine)
  • ¼ teaspoon sugar
  • A dash of [easyazon_link identifier="B002HMLMHY" locale="US" tag="nomrec-20"]sesame oil[/easyazon_link]
Instructions
  1. Marinate the beef in two thirds of the Stir Fry Sauce and corn starch for 20 minutes, set aside
  2. Boil water in medium pot, add salt, blanch broccoli for 1 minute, drain, set aside
  3. Heat [easyazon_link identifier="B00421AYKE" locale="US" tag="nomrec-20" localize="y"]stainless steel wok[/easyazon_link] over high heat, add 1 tablespoon of peanut oil, make sure the oil is smoking hot
  4. Add beef, stir and cook until the beef is 80% cooked, remove and set aside
  5. Add one tablespoon of peanut oil, turn heat to medium high
  6. Add garlic and ginger, stir for 30 seconds to flavor the oil
  7. Add broccoli, stir and cook for roughly 1 minute
  8. Add beef back into the wok, add Shaoxing wine, stir and cook
  9. Continue to stir, add the remaining Stir Fry Sauce to taste
  10. Stir and mix well, add salt to taste, then serve with rice!
Notes
The cut of beef and the way it is being cut affect the beef's tenderness. It is fairly common for Chinese restaurants to use baking soda to tenderize the beef, however, we have skipped this step eating at home.

For more crunch and mouthfeel for the dish, do not chop the broccoli into the smallest florets.

Different brands of soy sauce will have different level of saltiness. Please taste the dish before adding remaining Stir Fry Sauce to avoid undesired level of saltiness (Step 9).
