This super quick homey dish of Chinese chives and fluffy eggs is the perfect home for your leftover Chinese chives! Smooth milky eggs embedded with warm crunchy chives. Very easy to eat, and perfect over rice.
  • Yellow Chinese chives (or Chinese chives)
  • 2 extra large eggs
  • 50 ml milk
  • 1 tablespoon oil
  • ½ teaspoon salt
  1. Mix eggs, milk, and salt in a medium mixing bowl
  2. Cut yellow Chinese chives - chop the lighter (white) part into finer pieces and the yellow part into longer strips
  3. Heat pan over medium high heat
  4. Add 1 tablespoon oil
  5. Add the white finer pieces of the chives first, stir
  6. Add the yellow longer strips of the chives, stir
  7. Cook chives until almost fully cooked
  8. Add the egg mixture, cook until there is no liquid left, then serve!
It is important to cook the yellow Chinese chives and eggs separately because they require different cooking times. If the yellow Chinese chives are undercooked, it will taste very pungent; if the eggs are overcooked, it will taste rubbery and dry.
